One of my best recipe books is the 9×13 The Perfect-Fit Dish. It is all recipes for the most popular casserole dish. I have a vintage glass pyrex dish that I use for these main dish, side dish, and dessert recipes.
To use up that left over turkey and cranberry sauce, try this yummy dish. It makes up a slightly sweet and slightly spicy enchilada meal.
Mix up the filling of chopped turkey, whole cranberries, black beans, sour cream, salsa, cheese, green onions, cumin, salt & pepper.
Fill the tortillas – I like the corn and wheat mixed tortillas – and roll them up tight in your 9×13 dish.
Mix up the sauce of salsa, cranberries, and some hot pepper sauce. And spoon over the rolled up tortillas.
Bake for 45 minutes at 350. Then add more cheese on top and back in the oven for 5-10 minutes.
